Authentic Spanish Tostada


This may seem obvious to you Spaniards out there or people living in Spain. But for those who haven't experienced it yet, this simple breakfast is better than pancakes, french toast, eggs and bacon...you name it! It's easy to prepare, healthy and delicious.

We were at the beach town of Zahara de los Atunes for New Years and bought a 2 kilo loaf of whole wheat homemade bread. Check it out!

Dani carefully cut it up with a bread knife, toasted it, drizzled yummy Spanish oil all over it and topped it off with fresh tomato and salt. An even better way to make this is to finely grate fresh tomato in a bowl and then spread out the grated tomato on top of the toast. This is delicious! Give it a try!

MIA

Sorry readers for being MIA, but between the holidays, getting sick and having a minor surgery done, I haven't had much time to blog! But to prove that I am still a loyal blogger I'll post some pics of my Seta Mushroom New Year's Rissoto!

The ingredients that you need above: mushrooms and setas, grated parmesan cheese, onions and leeks, and a vegetable homemade stock.

Sautee the setas and mushrooms and save the juice that they release for the rissoto.
Here is the parsley, a cup of white wine, juices from the setas and mushrooms, sauteed mushrooms, setas, onions and leeks and the vegetable stock.
